Hasselback Potatoes with Garlic Oil, creamy pea sauce and fresh marjoram

Hasselback potatoes! Many times heard and seen but never tried. I just made them recently for the very first time and we loved them so much! 


Ingredients for two persons:
750g potatoes
2 cloves of garlic
one garlic bulb
two tablespoons of olive oil
fresh marjoram
salt, pepper

Ingredients for the sauce:
300g frozen peas
one onion
200ml almond milk

Instructions: Preheat the oven to 180 degrees. Wash the potatoes and cut them in such a way that they look like chips but are still connected to each other. Have a look on the pictures in this post to see exactly how it should be done. Press two cloves of garlic through the garlic press, mix it with the olive oil and put it on the potatoes. It’s important not to forget about the inside of the slices. Sprinkle the potatoes with some salt and put them in the oven for 60-70 minutes. In the meantime you can prepare the pea sauce. Cut one onion into small pieces and roast it gently with some coconut oil and the frozen peas. Add some salt and pepper and puree it with almond milk. Serve the Hasselback potatoes with the sauce, the roasted garlic and fresh marjoram! Enjoy!
