Sweet Quinoa: Almond Milk Quinoa with Rhubarb & Coconut Yoghurt

Sweet ​Q​uinoa? Yes, i​t’s real ​and tastes delicious! It’s ​o​ne of my ​all time favourite vegan desserts. You can ​combine it with literally every fruit, your favourite yoghurt or a compote of your choice. A desert can’t get healthier!

Ingredients for four little portions or two big ones:​
400g rhubarb
200g quinoa
400ml ​almond milk
coconut sugar/ maple syrup
a little bit​ of​ cinnamon
300g raspberries
400g coconut yoghurt

Instructions: Bring​ the almond milk to boil, add the quinoa, cinnamon and two tablespoons of the sweetener of your choice and cook it for 12 minutes. ​Let it cool down for a little while and add some almond milk ​if neccessary. Cut the rhubarb into small pieces and let it simmer in a pan until it’s smooth. It’s your choice: Let the rhubarb and the quinoa cool down or serve it hot with the coconut yoghurt, the raspberries and the sweete​ner (?)​ of your choice.
