Sweet Quinoa? Yes, it’s real and tastes delicious! It’s one of my all time favourite vegan desserts. You can combine it with literally every fruit, your favourite yoghurt or a compote of your choice. A desert can’t get healthier!
Ingredients for four little portions or two big ones:
400ml almond milk
coconut sugar/ maple syrup
a little bit of cinnamon
400g coconut yoghurt
Instructions: Bring the almond milk to boil, add the quinoa, cinnamon and two tablespoons of the sweetener of your choice and cook it for 12 minutes. Let it cool down for a little while and add some almond milk if neccessary. Cut the rhubarb into small pieces and let it simmer in a pan until it’s smooth. It’s your choice: Let the rhubarb and the quinoa cool down or serve it hot with the coconut yoghurt, the raspberries and the sweetener (?) of your choice.
