I loved the taste of Mango Lassi when I was a vegetarian. But after turning vegan I thought this delicious drink is part of the past, but than I found vegan Mango Lassi at a vegan food festival in Vienna and realized that the vegan version is as good as the real stuff. 🙂
Ingredients for 1,3 liter Mango Lassi:
250ml coconut milk
250g coconut yoghurt
4 tablespoons sweetener of your choice (I used Lucuma powder)
3 ripe mangos
fresh lemon juice
Peel the mangos and mix them with all the other ingredients. Add some more water or sweetener of your choice if you want to.
