Creamy Quinoa Curry

Curry is one of my favourite spices. These creamy coconut curry dishes with vegetables and rice are just awesome. We always bought the typical curry paste at the supermarket when we were home cooking. Then we noticed that the majority of these pastes aren’t vegan! Of course we had to find a substitute. I never thought it would be so easy to replace the curry paste. And here it is: My super easy curry dish without rice but with quinoa. You should definitely give it a try: It’s delicious!

  1. 600ml coconut milk
  2. ca. 200g quinoa
  3. ca. 400g chickpeas
  4. four carrots
  5. one zucchini
  6. half a lime
  7. one red pepper
  8. salt, pepper, coconut oil, curry
  9. two onions
  10. two -three cloves of garlic
  11. greens
  1. Put the quinoa in boiling water and wait until it's smooth.
  2. Cut the onions and the garlic cloves into small pieces and put them in a pan together with coconut oil.
  3. Roast the ingredients gently for some minutes and add approximately one teaspoon of curry.
  4. Fill in 100ml of coconut milk and some water and let it simmer a little bit.
  5. Meanwhile cut the zucchini, red pepper and the carrots into pieces and add it to the chickpeas and add another 200ml of coconut milk.
  6. Let it simmer until the vegetables are smooth or firm to the bite, as you prefer it.
  7. Now add the remaining coconut milk and some salt, pepper, curry to taste.
  8. When you serve it, just add some freshly squeezed lime juice and greens. Enjoy!
