Today I want to show you a very different type of pizza. I use eggplants instead of the dough and cashew cream instead of traditional cheese. It’s so delicious. Find the recipe below!
For about 15 little Pizza-Bites:
three cloves of garlic
200g cherry tomatoes
Preparation: Put the cashews in water for 1 hour.
Instructions: Preheat the oven to 180 degrees. Cut the eggplants in 1cm thick pieces and put them into water with salt. Cut the onions into small pieces, press the garlic gloves and roast it all gently for some minutes in coconut fat. Blend the cashews with 200ml of fresh water, the onions and the garlic so you get a nice cream. You don’t need a power blender for this. Season with salt and pepper. Put the tomatoes on the eggplants and add on or two spoons of cashew creme, just as much as you like. Now put the pizzas in for 5 minutes. Don’t forget about baking paper. Now cut the tomatoes into two halves, open the oven and brush the pizzas with coconut fat. Spread the basil and the tomatoes on the pizzas, add some salt, pepper and – if you like – chili powder. The pizza bites stay in the oven for another 20-25 minutes. Do not take the pieces out to early, wait until the cheese is light brown. Enjoy it hot!
